Ingredients

  • 1 garlic
  • 2 carrots
  • 1 large onion
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 2 celery
  • 1 sprig of broccoli
  • Parsley, bay leaf, paprika, salt and pepper (to taste)
  • Water
  • Oil

Preparation

  • First wash the vegetables carefully, peel them if necessary and cut all vegetables into small cubes.
  • Pour some oil in a pan, fry the vegetables and then add some salt. Stir with a wooden spoon to prevent sticking.
  • Remove from the heat and add the paprika, stirring well to infuse all the vegetables with the flavour.
  • You need to remove the pan from the heat so that the peppers do not burn and become bitter.
  • Add the other spices to taste and then stir again.
  • Cover the vegetables with water and then let it simmer until the vegetables soften. Adjust spices to taste.

Note: if you find the stock too watered down or you prefer a bit more texture like in a thick soup, grind some of the vegetables in a blender without adding water and add this puree to the soup.

  • 1 onion, cut into strips julienne
  • 3 slices of pumpkin
  • 1 medium tomato, chopped
  • 2 carrots
  • 12 green beans
  • 1 sprig of curry tree leaves
  • 1 tablespoon coriander seeds
  • 2 teaspoons oil
  • 1 teaspoon cumin
  • 2 red peppers
  • 1/2 teaspoon mustard seeds
  • 1 tablespoon tamarind paste
  • 1/4 cup coriander
  • 1/8 teaspoon turmeric
  • Salt (to taste)

Preparation

  • Wash the vegetables, peel them if necessary and cut them into cubes. Set them aside.
  • Fry the peppers and then add the coriander and half a teaspoon of cumin. Stir fry for a minute and then remove the pan from the heat. Set this aside.
  • Pour five cups of water into a pan and heat it.
  • Then add the diced vegetables and let them cook. You will see that a rich broth is formed.
  • When the stock is hot, remove a ladle and wet with the tamarind sauce.
  • Then add the mix of turmeric, coriander and pepper (you can remove the peppers) and finally the tamarind.
  • Fry the mustard seeds in a frying pan with the other half teaspoon of cumin. Then add the curry tree leaves and, when they are crispy, remove from the heat and add the soup.
  • Taste and adjust the taste with salt and pepper if necessary.

3. Chickpea vegetable soup
