Ingredients

  • half an onion
  • half a potato
  • olive oil
  • a dash of whipped cream or crème frache
  • 325 grams of green asparagus
  • 500 ml chicken or vegetable stock
  • a pinch of salt and pepper
  • one leek (optional)

 Preparation

  • Wash the asparagus and then cut off the ends. Cut the asparagus and potato into medium sized pieces.
  • Fry the onion and the potato in a frying pan. When they’re done, set them aside.
  • Bring the stock to the boil in a pan and add a little olive oil.
  • When the stock starts to boil, add the asparagus pieces. Let them cook on medium heat for a few minutes.
  • Turn off the heat and add the onion and potato to the stock. Place this soup in a blender and puree it until a homogeneous mixture is obtained.
  • Add salt and pepper to taste and cook for another 15 minutes over medium heat.
  • When the 15 minutes are up, add some whipped cream or crème frache to the soup and let it rest for a few more minutes so that all the ingredients can mix well.
  • Add some garnish if you like, and serve warm.

Ingredients

  • 2 garlic cloves
  • fresh basil
  • olive oil
  • 2 leeks
  • 2 courgettes
  • 1 sweet onion
  • 2 large apples
  • salt
  • cinnamon
  • 325 grams of green asparagus
  • 1 teaspoon brown sugar (optional)

Preparation

  • Peel the garlic cloves and cut them into small pieces (as small as you can). Do the same with the onion, courgettes and leek.
  • As with the previous recipe, cut off the ends of the asparagus and discard. Cut the asparagus into small pieces.
  • Then peel and cut the apples. Put them in a pan with a little water and cinnamon until they become soft. Make sure that no applesauce is created!
  • Heat in a frying pan with a little olive oil and fry the onions and garlic. Then add the leeks, asparagus and courgettes.
  • When the vegetables are cooked, add them to the pan with the apples and cinnamon.
  • Add a little more water until all the ingredients are covered and let it cook for 15 minutes. Then remove the pan from the heat to let the ingredients rest.
  • Then mix everything in a blender, and then add the basil, salt and pepper.
  • You can now serve the soup, enjoy!
